Dry Mouth-Approved Snacking: Homemade Chicken Broth

Water is hands-down one of the most important nutrients for our bodies, especially if you suffer from dry mouth. But H₂O isn’t exactly full of flavor, so snacking with it isn’t very exciting. Here’s where homemade chicken broth can come in handy, moistening other food it’s paired with like water and packing some punch for your taste buds — even when eaten alone.

“Broth is a great option, as it contains more flavor and nutrients when compared to plain water,” says Rachel Fine, a New York-based registered dietician and owner of the nutrition counseling firm To The Pointe Nutrition. “Since stocks are usually made with added herbs and spices, these ingredients help to increase the overall amount of immune-boosting antioxidants.” In addition, depending on how a broth or stock is made, it can also supply protein to your diet. But most importantly, if you have dry mouth, broth, like water, can help keep your mouth moist.

Homemade Chicken Broth

Ingredients

  • 2 pounds of chicken (dark and white meat)
  • 2 celery ribs with leaves
  • 2 medium carrots
  • 2 medium onions
  • 6 to 8 whole peppercorns
  • 2 quarts of cold water
  • 1-2 bunch(es) of dill
  • 1 tablespoon of extra virgin olive oil
  • 4 cloves of garlic, chopped
  • Kosher salt to taste

Instructions

In a large stock pot, sauté garlic with extra virgin olive oil. Add chicken (with bones), carrots, celery, and onion. Add cold water until the chicken and vegetables are covered. Add the dill (with leaves and stems intact) and peppercorns. Bring to a boil, then reduce to a light simmer and cook partly covered for two hours. Add kosher salt to taste. Turn off the heat, and allow the broth to cool, or if using immediately, slowly drain the broth from the chicken and vegetables, which you can save and serve separately.
